Bean and Corn Salsa
Colorful, Fresh Side Dish Easy To Make in Minutes
What You'll Need:
1 can of black beans
1 can of corn
onion
tomato
cilantro
jalapeños (optional—but gives it a better kick)
olive oil
salt
Directions:
Dice the onion, tomato, jalapeños and cilantro.
Mix all of the ingredients into a bowl, along with a tablespoon of olive oil and a few quick dashes of salt. Stir ingredients until they are mixed well.
Serve as dip with tortilla or corn chips, or use as a side dish along with rice. Serves 6-8 people.
