Combine in large bowl:
One 14 oz can black beans, drained
One 14 oz can pinto beans, drained
One 14 oz can of sweet corn, drained
4 bell peppers, finely chopped
2 jalapenos, finely chopped
2 avocados, finely chopped
¾ cup red onion, finely chopped
1 cup black olives, chopped
6 oz crumbled Feta cheese
Dressing:
Combine in a small bowl and drizzle over Cowboy Caviar:
½ cup of olive oil
3 small limes, juiced
3 Tbsp white wine vinegar
3 Tbsp honey
1 Tbsp taco seasoning
salt + pepper to taste
