With the new school year upon us, we search high and low for foods that can keep up not only our health – but our spirits, as well. There are lots of foods that can make or break our immune system. But, here at the Independent, we feel that we are charged with ensuring the health of our readers. Therefore, look forward to low cost, high energy recipes that you’ll enjoy. This issue, we’re looking at fantastic greens and the things you can do with them.

Ingredients: 1 bunch kale 1 tablespoon olive oil 1 teaspoon seasonings (your choice)
Directions: Preheat an oven to 350° F. Line a non- insulated cookie sheet with parchment paper. With a knife or kitchen shears, carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry the kale. Drizzle kale with olive oil and sprinkle with desired seasonings. Bake until the edges brown but are not burnt, which will be about 10 to 15 minutes. Put into a bowl and serve.
