Unlike regular apple pie, the “Easy Apple Pie” does not have a crust so it is easier to make and less fattening, making it a great recipe for college students. The first step is to combine the oatmeal, brown sugar, flour and cinnamon in a bowl and mix them well. Next, cut the butter into small squares and add them to the mixture. Using your hands, rub the crumb mixture together so that the butter is completely mixed with the other four ingredients. Set the bowl aside.
Next, peel and slice the apples, making sure to also remove the core, or seeds. In a round glass casserole dish, combine the apples, the fresh lemon juice and the sugar. Afterwards, spread the apples evenly in the casserole dish and sprinkle the crumb mixture on top.
All that is left to do is to bake and serve! The “Easy Apple Pie” can be baked in the microwave for 14 minutes or in the oven at 450° for 30 minutes. The “Easy Apple Pie” should serve five and can be served as is or with a scoop of ice cream on top. It is a delicious, easy to-make dessert that will have your friends raving.
